Ahoy thar all, as it’s now pushing 2AM as I pre-post this page,  instead of trying to philosophize or get riled up about something, I’m going to share one of my recipes with you! If you try it, let me know how it goes 😀 It’s one of my favourites.

Chorizo Stew

1x Ring Chorizo
1x Can Chopped Tomatoes
1 Can Butterbeans
1x Large White Onion
1/2 Halloumi Cheese
1/2 doz Chestnut Mushrooms
1x Beef Stock Cube (Or equivalent stock: 500ml worth)
1x small green chilli
1 clove garlic
1 tbsp dried oregano
1 tbsp dried basil
Salt & Pepper for seasoning

– Slice the Chorizo to approx. 0.5cm thickness and place in pot.
– Dice the onion and place in pot.
– Slice the mushrooms and place in pot.
– Crush the garlic and place in pot.
– Slice the green chilli and place in pot.
– Drain the butterbeans and place in pot.
– Pour the chopped tomatoes in pot.
– Pour stock into pot.
– Bring to boil, then reduce heat and simmer for 40 mins. Stir frequently.
– Dice the halloumi and add to the pot.
– Add the oregano and basil, and add salt and pepper to taste.
– Continue simmering for 10-20 mins until sufficiently reduced to a stew-like consistency. Continue stirring.
– Suitable for serving with pasta, hearty bread, or rice.
– For a richer stew, break up and add two slices of black pudding in with the other ingredients before bringing it to the boil.
